Is an endurance bike slower than a race bike?

Only slightly, and usually less than people expect. The more upright position is a touch less aerodynamic, but the comfort lets you keep working over a long ride instead of fading. Unless you're racing, you'll barely notice the difference.

Can I race on an endurance road bike?

You can, and plenty of people do at club level. It's a fraction less aggressive than a dedicated race bike, but the steady handling and comfort are an advantage on long road races and sportives. For flat-out crits, a race bike has the edge.

Do endurance bikes hold their value better than race bikes?

Generally yes. Endurance bikes appeal to a wider pool of riders and don't date as fast as aero race bikes, so they tend to resell more easily on the used market. That works in your favour whether you're buying or selling.

Which is better for a first proper road bike?

Endurance, almost every time. The comfier position and wider tyres are far more forgiving while you build fitness and confidence, and the bike still does everything from commuting to your first sportive. Step up to race geometry later if you find you want it.
